【1】 Production process of dried mulberry fruit

The production process of dried mulberry fruit production: material selection → cleaning → drying → cooling → packaging

Material selection: Choose ripe, fresh, and well colored mulberries, choose ones with strong stickiness, and try to choose mulberries with consistent sweetness as the first choice.

Cleaning: Pour the mulberries into a flowing water tank to clean them thoroughly, further remove unqualified fruits, and then hang them with hemp rope to air in a ventilated area.

Drying: The drying temperature of mulberry should not be set too high. One cycle of drying should take about one day, and the moisture content of dried mulberry should be maintained at around 15%.

Post drying treatment: Gently rub and use a windmill, sieve, or natural wind to remove impurities such as fruit stalks, dry leaves, and shriveled grains. Then, manual grading, packaging, storage, and sales are carried out based on the fullness of color and sourness.

【2】 Mulberry Drying Reference Process

Due to the fact that mulberry is a berry with high sugar and moisture content, the longer fruit shape is composed of small fruit sacs, making it difficult for water to come out, so it takes a longer time. At the same time, the drying temperature should not be too high, as too high a temperature can easily affect the effective content of anthocyanins.

The first stage: preheating stage, the drying room mode is set to: drying+no moisture discharge, the drying room temperature is set to 50 ℃, and the preheating time is 1 hour;

Phase 2: The drying room mode is set to: drying+dehumidification, humidity is set to 60%, temperature is set to 55 ℃, and baking time is 8 hours;

Stage 3: The drying room mode is set to: drying+dehumidification, with a humidity setting of 50% and a temperature setting of 60 ℃. Afterwards, the temperature increases by 5 ℃ every four hours, and the target humidity decreases by 10%. This process allows the drying room to continuously dehumidify, with a baking time of 8 hours.

Stage 4: The drying room mode is set to: drying+dehumidification, with a humidity of 15%, a temperature of 65 ℃, and a baking time of 2 hours; After the end of this stage, turn off the equipment and continue drying for 1-2 hours using residual heat.
