Drying process of persimmon cakes

1. One baking

After the persimmon fruit enters the roasting room, it quickly heats up to 40-50 ℃, causing the ethanol dehydrogenase activity in the persimmon fruit to be in a high state. Internal respiration is also strengthened to quickly complete softening, deastringency, and partial dehydration (around 25%), lasting for about 12 hours. Depending on the size and maturity of the persimmon fruit, it can be flexibly controlled. When drying persimmons, mold prevention is crucial, and a slight carelessness can cause mold and rot loss of the entire persimmon fruit in the roasting room within a few hours. Therefore, it is necessary to maintain the relative humidity inside the baking room below 70% to effectively prevent persimmon fruit from moldy.

Stop baking: Take out the persimmon fruit, cover it for several hours to soften, and then knead the cake once. Use moderate force when kneading the cake, so that the flesh is crushed and the skin is not broken. The specific kneading method is to grip the fruit with both hands and knead it vertically and horizontally, rotating with the kneading until the inside becomes soft and the persimmon kernel is crooked.

2. Secondary baking

Transfer the pinched persimmon fruit back to the roasting room and heat it up to 45-50 ℃ for about 15 hours, allowing the persimmon fruit to quickly dehydrate again by 35%

Stop baking: Take out the persimmon fruit that was baked for the second time, cover it again, soften it, and then knead the cake for the second time. At this point, the persimmon cake is basically formed.

 

3. Triple baking

Maintain at 40-45 ℃ for about 10 hours. At this point, it has reached the late stage of baking and the dehydration is relatively slow. The drying process is: the persimmon cake is soft and hard, and elastic, with a moisture content of about 35%.

Stop baking: Take out the persimmon cakes that were baked for the third time, cover them and soften them before shaping. The subsequent batches of persimmon fruits are exchanged in batches according to the above method and baked in turns, which not only improves the utilization rate of the drying room but also does not waste heat energy.

Use nylon and polyethylene composite small bags with good air resistance to package persimmons individually. After a few days, the cake surface will be covered with white frost and less prone to mold growth.
