Early drying stage
The morel mushrooms that do not require refrigeration and preservation are cut into different lengths and placed on a drying sieve. The sieve is then pushed into the oven of the dryer, and the door is tightly closed to start the machine for drying. The baking temperature should not be lower than 35 ° C, preferably at 35 ° C, with humidity controlled within 70% for about 3 hours. Use low temperature to qualitatively and color the morel fungus to ensure its full shape and not collapse.

Heating and dehumidification
The temperature rises within the range of 40 ° C to 45 ° C, and the humidity drops to 55%. After drying for about 2 hours, the morel fungus contracts and the moisture content significantly decreases.
Enhanced drying and dehumidification
Raise the temperature to around 50 ° C, set the temperature at 35%, and continue to bake for about 2 hours to strengthen the drying and dehumidification of morel mushrooms. At this point, the surface of the morel mushroom is basically dry, but the mushroom body, especially at the junction of the stem and cap, is still soft and has not dried thoroughly.
Final high-temperature drying
The temperature rises to 53-55 ° C and drops to 15% for high-temperature drying to achieve complete drying of Morchella.
It should be emphasized that during the drying process of Morchella, it is not advisable to heat up too quickly. Each stage is about 5 ° C, which is more suitable. The dried Morchella has a moisture content of about 12%, a plump appearance, a beige white stalk, a brown or black cap, and a fragrant odor. Refluxing
After the drying of morel is completed, do not rush to bag it immediately. You can let it sit in the air for 10-20 minutes to slightly soften its surface, otherwise the dry and hard morel will break and be damaged during the bagging process.
